In a medium sized mixing bowl, combine pancake mix, milk, egg, and lentils.
Heat a nonstick skillet over medium heat, add butter and melt to coat pan. Add pancake batter to pan to make 4 medium sized pancakes. Cook for approximately 5 minutes, or until you start to see bubbles forming in the pancakes, then flip. Cook for a few more minutes until both sides are golden brown. Plate and serve warm. Top pancakes with berries, lentils, and maple syrup.
