4 cups cooked rice (white or brown, whichever your prefer)
4 Tablespoons vegetable oil
2 Tablespoons diced onion
2 Tablespoons diced celery
2 Tablespoons diced red bell pepper
¼ cup tamari sauce
2 eggs, beaten
Instructions
In a large skillet sauté diced onions, celery and red bell peppers in vegetable oil until tender. Add the edamame and continue to cook on low heat for 1 minute. Add cooked rice and tamari sauce. Make a well in the center of skillet, pour 2 beaten eggs into the center and stir until fully scrambled. Mix all ingredients together in skillet. ENJOY!
Seapoint Farms Warm Bean Edamame Salad
Ingredients
1 tbsp EVOO
1 (12oz.) package Seapoint Farms Shelled Edamame
1 (16oz.) package frozen corn
1 (15oz.) can black beans, drained
1 (12oz.) jar roasted red peppers, drained and chopped
1 sweet onion , diced
1 tsp sea salt
1 tsp ground cumin
1/4 cup chopped fresh cilantro
2 tbsp freshly squeezed lime juice
Instructions
Heat a large nonstick skillet over medium-high heat. Add frozen corn; cook and stir until golden brown, stirring occasionally, about 5 minutes. Stir Seapoint Farms edamame, black beans, garbanzo beans, roasted red pepper, diced onion, sea salt and cumin into corn mixture; cook and stir until heated through, 3 to 5 minutes. Remove from heat. Add cilantro and lime juice; toss to combine. ingredients in a saucepan and bring to a boil. Place the frozen Seapoint Farms Shelled Edamame into saucepan. Bring back to a boil for additional 5 minutes. Serve warm...ENJOY!
