Edamame Fried Rice
Ingredients
  • 1 ½ cups of Seapoint Farms Shelled Edamame
  • 4 cups cooked rice (white or brown, whichever your prefer)
  • 4 Tablespoons vegetable oil
  • 2 Tablespoons diced onion
  • 2 Tablespoons diced celery
  • 2 Tablespoons diced red bell pepper
  • ¼ cup tamari sauce
  • 2 eggs, beaten
Instructions
In a large skillet sauté diced onions, celery and red bell peppers in vegetable oil until tender. Add the edamame and continue to cook on low heat for 1 minute. Add cooked rice and tamari sauce. Make a well in the center of skillet, pour 2 beaten eggs into the center and stir until fully scrambled. Mix all ingredients together in skillet. ENJOY!
